Course Prescription

Critical evaluation of the latest research and development in innovative thermal and non-thermal food processing technology. Open-ended application of these latest developments to different specific end-point food processing requirements. Teaching is highly research informed with principles, application examples and related individual research project work.

Course Overview

This advanced course will discuss two important topics in Food Process Engineering: principles of Thermal Processing, and innovative Non-Thermal Technologies. At the end of this course, students should have an in-depth understanding of the concepts and quantitative methods for the design, analysis and applications of thermal and non-thermal processing. Students should also have a detailed view of the thermal and non-thermal processing technologies, their mode of operation, and their advantages and disadvantages. Published papers in these areas will also be reviewed and discussed.

Learning Outcomes

By the end of this course, students will be able to:
  1. Understand and describe the fundamental principles of innovative thermal and innovative non-thermal food processing technologies such as microwave, infrared heating, ultrasound, high pressure processing, pulsed electric field, pulsed UV, atmospheric freeze drying, electromagnetic freezing and isochoric freezing. (Capability 1 and 3)
  2. Understand the steps involved in innovative thermal and non-thermal food processing and equipment involved. (Capability 1)
  3. Select and apply the approach to optimally select innovative non-thermal technologies for food processing (Capability 1, 2, 3 and 6)
  4. Retrieve, assess, and evaluate existing research outcomes and technologies relevant to the field of innovative non-thermal food processing. Classify, summarise, explain, and critique the basic findings of the literature review, synthesis the information and discuss future outlook. (Capability 2, 3, 5 and 6)
  5. Deliver a Research Report and an Oral Presentation that adequately covers all aspects of the investigation in the field of innovative non-thermal food processing technologies. (Capability 4)

Workload Expectations

This course is a standard 15 point course and students are expected to spend 10 hours per week involved in each 15 point course that they are enrolled in.

For this course, you can expect 2 hours of lectures, a 1 hour group discussion, 4 hours of reading and thinking about the content and 3 hours of work on assignments preparation.

Delivery Mode

Campus Experience

Attendance is required at scheduled activities including presentation and discussion sessions to complete components of the course.
Lectures will be available as recordings. Other learning activities including tutorials and discussion sessions will not be available as recordings.
The course will include live online events including group discussions.
Attendance on campus is required for tests.
The activities for the course are scheduled as a standard weekly timetable.

Course materials are made available in a learning and collaboration tool called Canvas which also includes reading lists and lecture recordings (where available).
