Course Prescription

Industry-focused advanced topics in post-farm-gate processing of milk including liquid milk, powdered dairy and fermented products. Waste and high value product recovery from milk processing. Trends in global dairy industry including new development in food physics and chemistry, new products and processes, design and production of novel foods. Includes individual project-based work, laboratory work and completion of a group-based project. Includes independent research to create unique innovative solutions to an open-ended problem.

Course Overview

The learning objectives of this course are as follow:
(i) To appraise the supply chain and the business aspect of the dairy industry. 
(ii) To identify the composition of milk and its effect of product quality and manufacturing. 
(iii) To assess the various technologies for the pasteurization of milk. 
(iv) To apply heat and mass balance principles in the operation of milk pasteurization. 
(v) To assess the various types of membrane and operation mode for the filtration of milk. 
(vi) To examine the application of membrane filtration on product development and resource recovery. 
(vii) To apply mass balance principles in the operation of milk filtration. 
(viii) To appraise the role of falling film evaporation systems in powder product manufacturing. 
(ix) To appraise the components of spray drying and how it affects the final powder product quality. 
(x) To apply mathematical modelling for spray drying control and operation. 
(xi) To apply mathematical modelling to the optimization of plant-wide dairy manufacturing.

Learning Outcomes

By the end of this course, students will be able to:
  1. Apply mass and energy balance as well as material transport principles in the operation of various operating unit in dairy manufacturing. (Capability 1, 2 and 3)
  2. Create mathematical tools which can be used to provide improvement to dairy manufacturing. (Capability 1, 2 and 3)
  3. Analyse dairy-based manufacturing from a plant or process wide scale for efficiency or production management. (Capability 1, 2 and 3)
  4. Evaluate Evaluate the cutting-edge technology and development in dairy processing. (Capability 2, 4 and 6)

Workload Expectations

This course is a standard 15 point course and students are expected to spend 10 hours per week involved in each 15 point course that they are enrolled in.

For this course, you can expect 24 hours of lectures, 12 hours of laboratory session, 24 hours of reading and thinking about the content and 90 hours of work on assessments.
