Learning Outcomes
- Describe and explain the food science of water, carbohydrates, lipids, proteins, enzymes, antioxidants, emulsions; characteristics of milk. (Capability 1, 2 and 5)
- Write a detailed report on scientific literature of food science and food chemistry by synthesizing and critically analyzing information (Capability 1, 2, 3 and 5)
- Effectively use the knowlege of food components including water, carbohydrates, lipids, proteins, enzymes, antioxidants to explain their nutritional and functional properties (Capability 1 and 3)
- Explain and critically evaluate properties of food products and complex systems including milk and emulsions from the perspectives of their food components (Capability 1, 2, 3 and 5)

Workload Expectations
This course is a standard 15 point course. The students are expected to spend 10 hours per 1 week in course of 15 points.
For this course, you can expect 24 hours of lectures 60 hours of reading, reviewing and thinking about the course contents, and 66 hours of work on assay and preparation for the test and exam.
Delivery Mode
Campus Experience
Attendance is expected at scheduled lectures to complete components of the course.
Lectures will be available as recordings.
The course will not include live online events.
Attendance on campus is required for the test and exam.
The activities for the course are scheduled as a standard weekly timetable.
Student Feedback
During the course Class Representatives in each class can take feedback to the staff responsible for the course and staff-student consultative committees.
At the end of the course students will be invited to give feedback on the course and teaching through a tool called SET or Qualtrics. The lecturers and course co-ordinators will consider all feedback.

Course materials are made available in a learning and collaboration tool called Canvas which also includes reading lists and lecture recordings (where available).
